Sweet potato rosti, avocado & poached egg |
Ingredients :
- 2 sweet potatoes, grated
- 3 tbsp olive oil
- a dozen cherry tomatoes on the vine
- 1 avocado
- 2 eggs
- ¼ tsp garlic granules
- 2 pinches dried chilli flakes
- salt & pepper
Method :
- Place the tomatoes in an oven-proof dish. Drizzle with 1 tbsp olive oil and roast in a preheated oven at 180°C for 15 minutes.
- In a bowl, mix the grated sweet potaoes with salt, pepper and garlic. Press to remove any excess moisture and form 2 patties. Heat a pan, add the oil and cook the rostis on each side until nice and golden.
