Sweet potato rosti, avocado & poached egg


Ingredients :

  1. 2 sweet potatoes, grated
  2. 3 tbsp olive oil
  3. a dozen cherry tomatoes on the vine
  4. 1 avocado
  5. 2 eggs
  6. ¼ tsp garlic granules
  7. 2 pinches dried chilli flakes
  8. salt & pepper


Method :

  1. Place the tomatoes in an oven-proof dish. Drizzle with 1 tbsp olive oil and roast in a preheated oven at 180°C for 15 minutes.
  2. In a bowl, mix the grated sweet potaoes with salt, pepper and garlic. Press to remove any excess moisture and form 2 patties. Heat a pan, add the oil and cook the rostis on each side until nice and golden.
